Description
Citrus caviar is one of the best-known Australian citrus species. It is characterized by being a very slow-growing shrub or tree that reaches 3 to 6 m. tall, and has sharp spines of about 2 cm. When opening the pod that contains the fruit, small balls can be found inside that explode on the palate. It is normally used in fish and seafood dishes, as well as in cocktails and desserts, among other things.
